A half-moon plate that sits inside the bowl and covers one side, leaving the other open. You cook on the plate and feed the fire through the open half, so the heat never gets away from you mid-cook.
This version has a 40cm opening cut for a wok, so the wok sits down into the heat rather than perching above it.
Any grease runs into the fire rather than down the outside of the bowl.
It's natural steel, so season it with oil before, during and after use, the same way you'd treat cast iron. Skip that and the first thing you cook will stick.
